Spelt is an ancient grain which should not be confused with common bread wheat,rye,barley or even oats. Although a member of the same grain family, it is an entirely different species and has certain properties, which make it in many respects quite different. Its most notable difference is its ability to be tolerated by many people with wheat sensitivities. It should be noted that this grain is NOT gluten free but contains less gluten than common wheat. We blend this flour with honey and lupin seeds to give it a subtle sweet but nutty taste!
